[:ID]Makanan yang digoreng memang terasa lebih lezat dan menggugah selera. Namun bila dikonsumsi secara berlebihan, makanan yang digoreng dapat memicu timbulnya beragam masalah kesehatan bahkan meningkatkan risiko kematian.

Hubungan antara konsumsi makanan yang digoreng dengan risiko kematian diungkapkan dalam sebuah penelitian terbaru yang dilakukan oleh tim dari University of Iowa. Penelitian ini melibatkan partisipan perempuan asal Amerika Serikat berusia di atas 50 tahun.

Para partisipan diminta untuk mengisi kuesioner yang berisikan detail kebiasaan makan. Para partisipan diminta untuk mengungkapkan jenis makanan gorengan spesifik beserta jumlah konsumsinya.

Dari data-data ini, tim peneliti membagi makanan gorengan yang biasa dikonsumsi para peserta k dalam tiga kategori. Kategori pertama adalah ayam goreng tepung, kategori kedua adalah ikan dan makanan laut goreng, lalu kategori ketiga adalah jenis-jenis makanan gorengan lain seperti kentang goreng, taco hingga chip tortilla.

Hasil penelitian menunjukkan bahwa konsumsi makanan yang digoreng berkaitan dengan peningkatan risiko kematian akibat berbagai penyebab. Hubungan konsumsi makanan yang digoreng dengan risiko kematian akibat masalah jantung juga diketahui sangat kuat.

Setelah mempertimbangkan beberapa faktor lain seperti gaya hidup hingga tingkat pendidikan, tim peneliti menemukan bahwa partisipan yang mengonsumsi setidaknya satu porsi makanan gorengan per hari memiliki risiko kematian delapan persen lebih tinggi dibandingkan orang-orang yang tidak mengonsumsi makanan gorengan.

Dari beragam jenis makanan yang digoreng, tim peneliti juga menemukan bahwa ayam goreng tepung memiliki dampak lebih besar terhadap risiko kematian. Partisipan yang mengonsumsi setidaknya satu porsi ayam goreng tepung per hari dapat meningkatkan risiko kematian sebesar 13 persen akibat berbagai penyebab dan meningkatkan risiko kematian sebesar 12 persen akibat masalah jantung dibandingkan orang yang tidak mengonsumsi makanan gorengan.

Tim peneliti juga mengungkapkan bahwa konsumsi satu porsi ikan maupun kerang goreng per hari dapat meningkatkan risiko kematian akibat berbagai hal sebesar tujuh persen. Kebiasaan ini juga dapat meningkatkan risiko kematian sebesar 13 persen akibat masalah jantung.

“Mengurangi konsumsi makanan gorengan, khususnya ayam goreng tepung dan ikan atau kerang goreng, dapat memberi dampak klinis yang berarti bagi spektrum kesehatan masyarakat,” papar tim peneliti seperti dilansir Medical News Today.

Meski begitu, tim peneliti menekankan bahwa hasil penelitian ini mungkin tak berlaku untuk populasi berbeda. Pasalnya penelitian atau studi observasi ini secara spesifik hanya berfokus pada perempuan di Amerika Serikat.

Terlepas dari itu, membatasi konsumsi makanan yang digoreng dapat memberi dampak baik bagi kesehatan. Alasannya, sudah banyak penelitian yang membuktikan bahwa konsumsi makanan gorengan secara berlebih dapat meningkatkan risiko diabetes tipe 2 dan mempengaruhi kesehatan kardiovaskular.

The results showed that consumption of fried foods was associated with an increased risk of death due to various causes. The relationship between consumption of fried foods and the risk of death from heart problems is also known to be very strong.

 

After considering several other factors such as lifestyle to the level of education, the research team found that participants who consumed at least one serving of fried food per day had a risk of death eight percent higher than those who did not eat fried foods.

 

Of the various types of fried foods, the research team also found that flour fried chicken has a greater impact on the risk of death. Participants who consumed at least one serving of fried chicken per day can increase the risk of death by 13 percent due to various causes and increase the risk of death by 12 percent due to heart problems compared to people who do not eat fried foods.

 

The research team also revealed that consuming one serving of fried fish and shellfish per day can increase the risk of death from various things by seven percent. This habit can also increase the risk of death by 13 percent due to heart problems.

 

“Reducing the consumption of fried foods, especially flour fried chicken and fried fish or shellfish, can have a meaningful clinical impact on the spectrum of public health,” the research team said as quoted by Medical News Today.

 

Even so, the research team stressed that the results of this study might not apply to different populations. Because this observation study specifically focuses only on women in the United States.

 

Apart from that, limiting the consumption of fried foods can have a good impact on health. The reason is that there have been many studies that have proven that excessive consumption of fried foods can increase the risk of type 2 diabetes and affect cardiovascular health.
